Is it possible to get an asat super with lower impedance mfd jumbo pups - like the earlier ones?

No I don't think so. The last batch of ASAT Supers were completed in 2010 and they all had the same overwound MFD pickups, see: ASAT Super.

If you can find a used or NOS ASAT Super, you could alway have the pickups rewound to the ASAT or ASAT Special specs. See: List of pickups used in G&L guitars.

... or just score a Tribute ASAT Special and swap its MFDs, a used Trib Special might be cheaper than ordering new pups.
I did that (I have 2 Trib Specials) but went back after a short while, as I found to prefer the stock setup.

^ most probably not, but the MFD's are not potted so it looks quite feasible to unwind part of the coil...

This is not true, ALL G&L pickups are wax potted. See: How are G&L pickups currently made?
